An authentic setting for a contemporary inn. In a former 17th-century farmhouse with red tiles, a large terrace and stunning natural surroundings, the Lore Ttipia restaurant pulls out all the stops.

From Thursday to Sunday, enjoy Michelin-starred cuisine at the Lore Ttipia restaurant, led by Chef John Argaud. The Chef draws inspiration from the finest produce of the ocean coast, the Navarre countryside and the Pyrenean mountains to create honest, refined cuisine enhanced by the warmth of the grill.
From Monday to Wednesday, Chef Albin Judde de Larivière offers creative and generous bistronomic cuisine, faithful to the Basque spirit.

Smoking, cooking, the flame licks, the fire marks, the flavours concentrate for a signature that is bold, contrasting and exciting, as vivid as the all-powerful Basque nature.

Terroir

The seven Basque provinces are an open-air treasure trove. The Atlantic Ocean and the mountains inspire a cuisine of distinctive flavours with a strong emphasis on the connection between land and sea. At the gourmet restaurant Lore Ttipia, Chef John Argaud picks and chooses from the riches of local breeders, market gardeners, farmers and producers.

Fish caught in small vessels, honey, cheeses, lamb, wild fruit, and very soon a permaculture kitchen garden on the Ostape estate. Here, nature sets the pace. With its contrasts, acidities, fermentations and purity, the Basque terroir holds all the cards for a lively, inspired cuisine brimming with emotion.

Wine

In the Basque Country, a proud and multifaceted land by nature, the wines speak for themselves. The 400 vintages in our cellar come in every shade and hue, drawing their inspiration from the red Triassic sandstone and Keuper ophite soils of the Irouléguy and Riojas hillsides.

Let us explore the south-west of France from its small-scale producers to its wines from more renowned estates. This is a journey of discoveries and happy encounters that reflects the fierce singularity of our land and the veracity of our winemakers.

We are particularly fond of the wines from the Terres de Natures label that include Sauternes, Beaujolais, Bordeaux and Languedoc, all terroir wines of intense expression.
